NCBS BBQ BOOT CAMPS & NCBS CERTIFIED BBQ JUDGE CLASSES SAMPLE AGENDA
Our NCBS BBQ Boot Camps & NCBS Certified BBQ Judge Classes are destination events attended by barbecue and food enthusiasts from all over the world.
NCBS secures the services of North Carolina’s premier Pit Masters plus Chef(s) to instruct our classes. We teach the campers to cook whole hogs eastern NC style, shoulders and Boston butts western NC style, chicken, pork ribs, beef brisket, pork tenderloin, beef prime rib and whole wild fish. Campers are also instructed how to make eastern NC vinegar based sauce and Lexington style BBQ dip and rubs along with side dishes such as collards, baked beans, banana pudding etc.
Jim Early teaches how to make some of the nationally acclaimed dishes from his published and soon to be published cook books including the Pimento Cheese featured in Southern Living.
There are judging classes intertwined with the cooking classes. Attendees are first taught how to cook and then taught how to judge. All attendees exit camp as NCBS Certified BBQ Judges.
There is also a mini class on Quality of Life-14 Steps to Balance provided by Jim Early who has taught classes and produced seminars on this subject for lawyers, doctors and businessmen and women across the country for the past 20 years. The camps start on a Friday at 2 p.m. with registration, Certified BBQ Judge Classes and cooking classes that precede a cook out and mixer at 5:30 p.m. Classes resume at 7 p.m. and run until about 9 p.m. Camp resumes at 7 a.m. Saturday morning and runs to 4:15 p.m. Saturday afternoon. Breakfast and lunch are provided. Campers have a break to shower, etc. and return to camp at 6 p.m. for THE Party. Campers dine with our guests, sponsors, celebrities and fellow campers. THE Party starts about 6 p.m. and ends about 8:30–9:00 p.m.
Each camper receives a diploma signed by NCBS officers/Pit Masters/Chefs. Each camper receives a certificate as an NCBS Certified Judge signed by NCBS Officers/Pit Masters/Chefs. In addition, each camper receives a well made hat, shirt and apron with NCBS logo and BBQ Boot Camp insignia. Campers usually sign each others hats and aprons and the Pit Masters and Chefs (if asked) will sign as well.
Camp cost is $449 p/p for male/female campers who are already members (limit 35) and includes the cook-out/mixer and classes Friday night, breakfast, lunch and THE Party Saturday night, time with the Pit Masters and classes on Saturday plus hat/shirt/apron/receipes. Spouse or guest may attend THE Party with a camper for an additional $30 fee.
Lodging IS NOT included in the camp fee.
