Three generations of blood sweat and tears and a love of cooking authentic NC BBQ the old fashioned way form the backbone of The Pik-n-Pig BBQ pit in the quaint little eastern NC town of Carthage. The Pik-n-Pig is the brainchild of Janie Shepherd and her son Ashley. It is the culmination of years of family cooking that produced a concession trailer business, that produced a restaurant that continued to grow and got better and better and became a destination NC BBQ pit.

The Pik-n-Pig is located at Gilliam McConnell airfield just outside of Carthage. One can drive or fly to get their BBQ fix. If you wish to fly, the coordinates and air field features are on their website. One can dine inside or outside. The PnP cooks Boston butts, pork ribs and chicken the old fashioned way-- low and slow. The Boston butts are hand-rubbed with PnP’s special blend of seasonings and then slow cooked for up to 10 hours over Hickory wood. The pork ribs are slow smoked for 4+ hours over Hickory coals ad basted with PnP’s honey BBQ sauce. Their chicken is supplied by local farmers and delivered daily. The birds are lightly seasoned with PnP’s signature rub and then slow smoked over Hickory coals to perfection.

For starters one can get fresh local jumbo chicken wings that are slow smoked, then fried to order, sauced with your choice of BBQ sauce and served with homemade Ranch dressing. There are many other starters. Try the fried pickles. The Pik-n-Pig has a host of yummmmy sandwichs--Pork Chop, Pulled Pork, BBQ brisket, Fried or Grilled Chicken to name a few. PnP also has plates of all of their great meats and sides that compliment them to a “T”. Also they are one of the few BBQ places that serve beer.
Hours are Tuesday-Saturday 11am to 8pm. Sunday 11am to 3pm.
